Solution:
Convert the document to Google Doc
Steps:
Ask the parent or student for the name of the course and assignment.

Log into Chromebook with student Google account
Log into Pearson with the student's Google login (I found this under history)
Locate Course, Lesson, and assignment that is causing the issue
Open the file. Confirm the issue is the missing or empty text box
Select FIle - Convert to Google Doc
Verify that the text box is now visible, contains text, and that the Google document can be shared.
Logout
Inform parent/student of the solution for similar issues in the future.
Bonus: While in Pearson allow popups. This is not related to this issue but may resolve future issues in the program.
